Grape: 80% sangiovese, 20% sagrantino.
Vineyards: vineyards in Bevagna (Pg) in Vocabolo Arquata at 230m height, exposure South-East on clay-calcareous soil.
Description: accurate selection of the excellent Sangiovese grapes together with Sagrantino. Ageing in oak barrels for 30 months. This is a structured and persistent wine. The bouquet presents notes of mature fruits and spices. Pairing with mature hard cheeses, grilled meats and well structured courses.
Harvest: handmade from mid-September until the beginning of October.
Vinification: grapes are crushed and de-stemmed, fermentation is made in stainless steel tanks at controlled temperature at 28°C. Maceration of 3-4 weeks with pumping over and delestage. The wine is aged in large oak barrels for 30 months and at least 12 months in bottle.
